Ingredients
  • 3 eggs
  • 1 cup milk
  • 1½ cups gluten-free all-purpose flour
  • 2 teaspoons baking powder
  • 1 cup shredded Parmesan cheese
  • 2 scallions, finely chopped
  • ½ teaspoon salt


Directions
  1. Preheat oven to 425 degrees F. Spray a muffin tin with non-stick spray.
  2. In the bowl of a standing mixer using a whisk attachment, mix together eggs and milk until a smooth mixture forms. Add in the flour and baking powder and mix until a very smooth creamy batter forms. Add in the Parmesan, scallions and salt and mix until smooth.
  3. Pour the mixture into the prepared muffin cups, filling each about halfway. Cook for 18 to 20 minutes until golden brown and puffy.
  4. As soon as the popovers come out of the oven, slit the tops to allow steam to vent.
