Ingredients
  • ¼ cup cornstarch
  • ½ cup sugar
  • ½ teaspoon salt
  • 3 cups rice milk
  • 2 teaspoons vanilla extract
  • 1 box Enjoy Life Foods Soft Baked Double Chocolate Brownie Cookies
  • 1 cup sliced strawberries
  • 1 cup blueberries
  • 1 cup blackberries
  • 1 cup raspberries
  • 6 small trifle bowls


Directions
  1. In a medium saucepan, whisk together the cornstarch, sugar and salt until well combined. Set over medium heat and slowly whisk in the rice milk. Cook, whisking constantly until a few bubbles erupt on the surface and the mixture thickens, about 10 to 15 minutes.
  2. Remove the pudding from heat and whisk in the vanilla extract. Cool to room temperature, then place a sheet of plastic wrap directly on the surface of the pudding. Refrigerate until chilled, about 2 hours.
  3. Once the pudding is chilled, layer it in the trifle bowls alternating between pudding, Enjoy Life Foods Soft Baked Chocolate Brownie Cookies and berries. Serve immediately.
