Ingredients
  • For the Dressing
  • ½ cup mayonnaise
  • 1/8 cup sour cream
  • ¼ cup basil leaves
  • ¼ cup parsley
  • 1 clove garlic
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 2 teaspoons lemon juice
  • ½ teaspoon salt
  • For the Salad
  • 1 (12 ounce) package gluten-free brown rice pasta
  • 2 cups shredded romaine lettuce
  • 4 ounces salami, chopped into strips
  • 4 ounces provolone cheese, cute into 1-inch cubes
  • 1 cup diced tomatoes
  • ½ cup basil leaves, cut into thin strips


Directions
  1. To make the salad dressing, pulse together all dressing ingredients in the bowl of a food processor until smooth. Transfer to a bowl, cover and refrigerate until ready to use.
  2. To make the salad, cook the pasta according to package instructions. Drain the pasta and run until cold water to cool the noodles. Drain and cool completely.
  3. Once the pasta is cooled, toss together the pasta, lettuce, salami, cheese, tomatoes and basil leaves. Drizzle the dressing over the salad and toss together until well combined. Cover and chill until ready to serve.
